Avocado and Banana Bread

banana breadWhat?  Seriously it is delicious and if you can get past the greeny colour when you are making it I promise you will love it.  The buttery avocados replace oil and butter in this recipe.


1/2  cup pureed ripe but not overly ripe avocado – I did not puree mine and this resulted in small green lumps in the banana bread…oops!

3/4 cup coconut sugar (or white sugar if you don’t have it)

1+ 1/2 cup Flour (I used Robin Hood Nutri blend with Omega 3s and Fibre)

1/2 cup Oats

1/2 tsp Baking Soda

1 tsp Baking Powder

2 large eggs

2 tsp Vanilla extract

1 tsp ground Cinnamon

1/2 tsp ground Nutmeg

1/2 cup thick Greek Yogurt

1 Large or 2 Small mashed bananas (I freeze them first and then they are total mush when you thaw them)

Topping: 1 large banana sliced, 2 tsp coconut sugar for sprinking (or use sugar cinnamon)


Preheat the oven to 320 F

Grease a 23 cm by 13 cm pan

Process the avocado and sugar together to make a mash. Add the remaining ingredients except the sliced bananas and mix until combined.  Spoon into the pan. Place two rows of banana slices along the top of the mixture and sprinkle with coconut sugar or sugar cinnamon.

Bake in the oven for 1 hour and 20 minutes until the sides start to pull away from the pan.  If it starts to brown too quickly then cover with aluminum foil.  Cool in the tin for 30 minutes before turning out onto a wire rack.  Enjoy and don’t tell your kids about the avocados!
