Beet Red Velvet Cupcakes

beet cupcakesI have been trying to fall in love with beets ever since I read how good they are for you! (Beet article)   I admit I am not in love yet but when you hide them in these cupcakes they are delish and they look like red velvet cupcakes!  This recipe is adapted from a friend’s Brownie recipe.

 

 

1 cup Pureed Beets

1 cup Black Beans

1/2 cup Coconut oil (melt in pan first)  I think it would work with 1/3 cup Oil – Yes tried it and worked great!

1/2 cup Sugar (also tried without this and it tasted great too) Just the honey was enough sweetness.

1/2 cup Honey

1 tsp Vanilla

2 Large Eggs

1/2 Heaping cup Whole Wheat flour

1/3 Cup Cocoa

1/2 cup Semi Sweet Chocolate chips (you can eliminate if you want)

1 tsp Baking Soda

Blend Beans and Beets in a food processer until smooth.  then add coconut oil, eggs, vanilla and Honey.   Mix dry ingredients separately and then mix wet and dry together.  Put in foil cupcake wrappers and bake at 350 until firm to the touch.   Enjoy !
