Broccoli Cheese Spagetti Squash Bake

This is one of my oldest recipes that I started making when I first tried to change my eating habits.  I used to make it with Pasta but have now made it with spaghetti squash.  YUM! This would serve 3 people as a side dish. If you want to make more just double the recipe.

Slice a Spaghetti Squash in half lengthways and place in a 400 degree preheated oven. Place Squash face down in a Pyrex dish or pan with an inch of water in it and bake for 50 to 60 minutes.

In a bowl mix together 1 small container 1% Cottage Cheese,  1 Diced Green Onion, 1 Cup Steamed Broccoli (steamed in microwave), 3Tbsp Parmesan cheese, 1 tsp Basil, 1 tsp Oregano, 1 tsp Garlic Salt, 1 tsp Chili Peppers, 2 Large Egg Whites.

When the Squash is cooked, scrape the strands free of the shell with a fork and combine with the other ingredients.  Place in a (greased) Pyrex dish  and sprinkle 1/2 Cup low fat mozzarella cheese over top. You can bake it in the Squash Shell but we have not had success with getting good Squash and some of the shells had to be tossed.

Bake at 350 degrees for 15 minutes and then broil for 2 minutes to get the top nice and brown.  Serve with salad 😀

As you can tell by the photo it was such a hit with Soleil and I as we only have a little bit leftover !
