Butternut Squash and Leek Soup

Saute the first three ingredients;

1 cup of coarsely chopped onions,

1 tsp chopped garlic,

1 1/2 cups of white leeks in 2 TBSP of olive oil until carmelized,

Then add in 4 cups of chicken or vegetable broth.

Add in 4 cups of diced Butternut squash (yes you can buy it already cubed).

Let simmer until squash is cooked fully and softens when poked.

Season with cumin, curry powder.

Blend with hand blender or in Blender, finish with a 1 cup of coconut milk or almond milk to make it a  more creamy and reduce the Leek potency:).
