Chickpea Blondies!

Can you believe it?  Yes just like the Black Bean Cupcakes these are made with protein filled Chickpeas!  Adapted from the ambitiouskitchen.com recipe given to me by my good friend Trysh.

One can chickpeas rinsed and drained.

1/2 cup Natural (if you have it) peanut or almond butter.

1/3 cup Honey (or Maple syrup)

2 Tbsp Vanilla Extract

1/4 cup Coconut Oil (melted)

1 Egg and 1 Egg White (discard the extra yolk)

1 Tbsp Chia seeds

1 tsp Baking Powder

1/2 tsp Baking Soda

1 shake of salt

Mix all ingredients in food processor (I just used an ordinary blender) pulsing them until there are NO LUMPS of chick peas. Then FOLD in 1/2 cup Chocolate Chips (optional) by hand in the blender.  Pour mixture into an 8×8 pan sprayed with cooking spray.

Bake at 350 degrees until bounce lightly from touch and a toothpick comes out clean. Let cool slightly before cutting.  DELISH!!!!  They even passed the husband test!  Note these are so sweet that next time I will cut the honey OR the chocolate chips!  😀
