Chocolate Mint Oatmeal Protein Squares

20160501_141847I am always asked for a good protein bar recipe so I tried to make one from scratch.  Here is my first attempt! I love chocolate mint so I tried this flavour first.



You could add in nuts but I didn’t want to in case the kids wanted to take them to school.

2 cups Mejool Pitted Dates

2 Eggs

1 1/2 cups Oats

1/4 cup Cocoa

1/4 cup Melted Coconut Oil

1/4 cup Honey or Maple syrup

1 tsp Peppermint Extract

1 cup Vanilla Protein powder (your choice of brand)

1 handful Chocolate chips (optional)

I chopped the dates in my food processor until in small pieces, I then added in the eggs to mix it well.

Mix remaining ingredients in a bowl.

Grease a 9″ x 9″ pan.

Press mixture into pan and bake at 350 degrees for 25-30 minutes.  Let cool then cut into squares.  I hope you enjoy them as much as I do!
