Crunchy Quinoa Coconut bars

I had a craving for something a Healthy treat with Coconut so I played around with a recipe from and came up with this one.

The uncooked Quinoa gives it a real crunch!

1 cup dry Oats

1 cup Uncooked Quinoa

1/2 cup Unsweetened Coconut

1/2 cup Sunflower seeds

1/2 Cup Chocolate chips (optional)

1/2 cup Peanut Butter

1 Tbsp Coconut Oil

3/4 Cup Honey

1/2 scoop Protein Powder (yes it is a treat but then I feel better about eating it haha).

Preheat oven to 350 degrees.  Spray a 9×9 baking pan with Pam or coconut spray.  Spread oats and quinoa on a cookie sheet and toast in preheated oven for 5 minutes.

In a medium saucepan melt together the Peanut butter, Honey, Coconut Oil,  and chocolate chips until combined and melted.

After Quinoa and Oats are toasted, combine with other dry ingredients and then combine with the warm mixture until thoroughly mixed.  Then press into your baking pan and bake at 350 degrees for 15-20 minutes.  Let cool before cutting.
