Healthy Home Made Granola

20150124_214309Now I should warn you…. this is not as sweet as the granola you are used to in the stores.  But that’s because it is not full of sugar/oil/salt! I like it for a savoury topping to yogurt and berries.  (If you want a sweeter snacking granola then you should up the honey to 1 cup. )

Adapted from my mum’s  recipe.

1/2 Cup Honey

1/4 Cup Coconut Oil (melt in pan first)

2 Egg whites and 1 Egg whisked together

1/2 tsp Vanilla

4 Cups Oats (can be gluten free)

1 Cup Raw Wheat germ (0mit if you are gluten free)

1 Cup Slivered or Sliced Almonds

1/2 Cup Unsweetened Coconut

1/2 Cup Shelled Sunflower seeds and or Pumpkin Seeds

1/2 tsp salt

1 Cup Raisins ** Add after baking so they don’t dry out too much.

Sprinkle of Cinnamon Sugar

Mix all of the wet ingredients together first, then add in the dry ingredients.  Mix well then spread out on a cookie sheet.  Sprinkle cinnamon sugar over top.

Bake at 300 degrees F for 30-60 minutes stirring often.  It should look golden brown (toasted) when finished.  Add the raisins Cool, store in a tightly covered container. I freeze mine as well.
