Kale and Chickpea Salad

kale and chickpea salad







Thanks to my sister ERIN for this recipe… it gets better as the salad “cooks” in the lemon juice.

1 bag baby kale salad mix

3/4 bag coleslaw mix with carrots

1can of chick peas drained and rinsed

1 stalk green onion

1/2 – 1 whole lemon – juice

2 tsp lemon zest

4-5 tbsp of toasted sesame seeds

( I just put in a fry pan on the stovetop)

White balsamic vinegar. Olive oil, salt and pepper to taste

Let sit for at least one hour before serving. ENJOY!
