Quick Super Foods Stir Fry Salad

This is the easiest recipe ever… I created it out of need for something I could make in under five minutes and eat in front of the computer….Take a bag of Sweet Kale Superfoods salad, (Costco or Loblaws carry it).

Spray a frying pan with Non stick cooking spray.  Pour 2 cups of the salad mix ONLY into the pan.  Add one chopped chicken breast.  Stir fry for 3 minutes, add salt, pepper, lemon juice, toasted almonds or sesame seeds add a drizzle of White balsamic vinegar and enjoy while steaming hot!

ps. Save the craisins/pumpkin seeds for next week to make “Granola snack muffins”.  Throw the dressing away!
