Crockpot Vegetarian Pumpkin Chili

I encourage everyone to try and eat one “Meatless” or Vegetarian meal a week.  It is great for the body and it’s usually cheaper and easy to make!

I took this from another recipe that had ground beef and pumodified it to make it vegetarian.

2 tsp Olive Oil

1 Medium Onion, Diced

2 Stalks Celery, sliced

1 Red Pepper, Diced

1 T minced Garlic

1 T ground Cumin

1 T Chili Powder (I use more as I like it spicey).

2 Cans Diced Tomatoes in their Juice

1 Can Black Beans (drain and rinse well)

1 Can Garbonzo Beans (drain and rinse well)

1/2 Can Red Kidney Beans (drain and rinse well)

1 Can of Pureed Pumpkin (not Pumpkin pie filling 🙂

1 1/2 Cups Broth (Vegetable if you want it truly vegetarian)

Grated Cheese for serving if so desired.

Sautee the Onions in the Olive Oil until caramelized, then add the Celery and Red Pepper for 5 minutes.  Add the pan ingredients to the other ingredients in a Crock Pot.  Put on High for 3 Hours and then turn off and let sit until it cools. Stir Occasionally.

Add extra seasoning to taste and ENJOY!
